Broad Bean Pilaf (Bakla Aşı)
A traditional and hearty regional dish from Alanya, often served at large family gatherings.

Main Ingredients:

1 kg dried broad beans (with outer shells)

4 tablespoons butter

1 tea glass vegetable oil (about 100 ml)

1 kg onions

2 tablespoons red pepper flakes (or ground red pepper)

1 teaspoon salt
🥣 Preparation
Soak the Beans:
Soak the dried broad beans overnight in plenty of water.
Remove the Skins:
The next day, peel off the outer skins of the soaked beans and rinse them.

Cook the Beans:
Place the peeled beans into a pot. Add enough water to cover them and bring to a boil.
Cook until the beans absorb the water and become completely tender. If necessary, add hot water gradually.
Mash into Purée:
Once cooked, mash the beans in the same pot using a wooden spoon until smooth and puréed.
Sauté in Butter:
In a separate pot, melt the butter. Add the mashed beans and sauté for a few minutes.
Transfer to Serving Dish:
Spread the sautéed bean purée onto a serving plate.
Prepare the Onion Topping:
Coarsely chop the onions. Sauté them in vegetable oil until lightly golden.
Add the ground red pepper and cook briefly.
Serve:
Pour the onion mixture over the bean pilaf and serve hot.
✅ Tip
Do not stir the beans while cooking, as this may cause them to stick to the bottom of the pot.
Make sure the beans are fully tender for a smooth and creamy texture.
