Black-Eyed Pea Salad (Ülübü Piyazı / Kuru Börülce Piyazı)
A popular regional salad made with dried black-eyed peas, this dish is light, refreshing, and nutritious.

🛒 Ingredients
Main Ingredients:

500 g dried black-eyed peas

4 medium onions
-
½ bunch parsley
-
½ bunch fresh dill
-
1.5 tea glasses olive oil (about 150 ml)

2 lemons or ½ tea glass vinegar

1 teaspoon salt
🥣 Preparation
Soak the Peas:
Wash and clean the dried black-eyed peas. Soak them in water for 2–3 hours (preferably longer).
🔥 Instructions
Cook the Peas:
Place the soaked peas in a pot and add enough water to cover them. Boil until tender.
Skim off the foam that forms during boiling.
Once cooked, drain and transfer to a large mixing bowl.
Prepare the Onions:
Finely slice the onions and rub them gently with salt. Add them to the cooked peas.
Add the Greens:
Stir in finely chopped parsley and dill.
Add olive oil and either lemon juice or vinegar according to preference. Mix well.
Serve:
Transfer to a serving dish and serve fresh.

If you add the juice of one lemon 2–3 minutes before removing the peas from heat, they will remain bright and not darken.
