Spiny Squash Tarator

(Spiny Squash Mash)

Ingredients (Serves 6–8)

Main Ingredients:

  • 1.5 kg spiny squash

  • 2 cups walnuts

  • 3 medium lemons

  • 3 teaspoons salt

  • Garlic (optional)

  • Water (optional)

  • Vegetable oil


Instructions

Slice the squash according to its natural shape. To prevent the slippery texture from sticking to your hands, soak the sliced squash in water for 5–10 minutes. Then peel off the skins.

Thinly slice the peeled squash, sprinkle with salt, and fry in hot oil until golden brown.


Preparing the Tarator

Pound the walnuts in a mortar until they release their oil. Transfer them to a bowl and mix with water. (Use less water if a thicker consistency is desired.)

Crush the garlic in a mortar. Add the garlic and lemon juice to the well-crushed walnuts.

Add salt if desired. Finally, mix the fried squash with the prepared tarator sauce and serve.


Tips

  • To prevent the walnuts from darkening, add the lemon juice just before serving.

  • A food processor may be used instead of a mortar.
