🍽️ Alanya Style Minced & Meat Pilaf (Wedding Pilaf)

🛒 Ingredients

1 kg bone-in meat

300 g ground beef

5 cups beef broth

4 cups rice

5 tablespoons butter

3 medium onions

1 medium tomato

½ bunch parsley

2 teaspoons salt

1 teaspoon black pepper
🥣 Preparation
Soak the Rice:
Soak the rice in warm water with 1 tablespoon of salt for at least 1 hour.
Boil the Meat:
Place the bone-in meat in a pot with enough water and bring to a boil. Skim off any foam that forms on the surface.
Add Flavor:
Add 2 peeled onions (cut into quarters) and 1 whole tomato to the pot.
Finish the Meat:
Add salt when the meat is almost cooked. Once tender, remove from heat, let it cool, separate from the bones, and cut into small pieces.
🔥 Cooking Instructions
Cook the Ground Beef:
Place the ground beef in a pot and cook until it releases and absorbs its juices. Add butter and continue sautéing.
Add the Onion:
Add 1 very finely chopped onion and sauté until softened and lightly golden.
Cook the Rice:
Drain the soaked rice and add it to the pot. Sauté for about 5 minutes. Pour in the beef broth and add salt. Cook over low heat until the rice is tender.
Rest the Pilaf:
Let the pilaf rest for 15–20 minutes after cooking, then gently fluff with a fork.
Sear the Meat:
In a separate pan, sauté the boiled meat pieces with butter until lightly browned.
Serving:
Place the sautéed meat on top of the pilaf. Sprinkle with finely chopped parsley and black pepper before serving.
Tip:
When adding the broth, adjust the quantity depending on the type of rice you use to ensure perfectly fluffy, separate grains.
