White Bean Salad (Fasulye Piyazı)
A classic appetizer in Turkish cuisine, white bean salad is a light and nutritious dish often served alongside grilled meats.

500 g dried white beans

2 medium onions

1 medium tomato

½ bunch parsley

1.5 tea glasses olive oil (about 150 ml)

1 lemon or ½ tea glass vinegar

2 boiled eggs

1 teaspoon salt
🥣 Preparation
Soak the Beans:
Sort and wash the dried beans, then soak them overnight in plenty of water.

Cook the Beans:
Boil the soaked beans until tender. Skim off the foam that forms on the surface during boiling.
Once cooked, drain and transfer them to a mixing bowl.
Prepare the Salad:
Add finely chopped onions and diced tomatoes to the beans.
Stir in finely chopped parsley.
Add olive oil, salt, and either lemon juice or vinegar according to preference. Mix gently to combine.
Serve:
Transfer the salad to a serving plate.
Slice the boiled eggs into crescent-shaped pieces and arrange them on top.

The amount of lemon juice or vinegar can be adjusted to taste.
Mix gently to prevent the beans from breaking.
