Pişi Recipe
Crispy on the outside and soft on the inside, pişi is one of the most popular fried dough pastries, especially enjoyed at breakfast.
Servings: 6–8 people
🛒 Ingredients
3 cups yogurt
1 cup milk
3 eggs
½ tea glass vinegar
1½ teaspoons baking soda
1½ teaspoons salt
Flour (as much as needed)
For kneading:
1½ tea glasses vegetable oil
For frying:
Vegetable oil
🔥 Instructions
Prepare the Dough:
In a large bowl, mix all the ingredients except the vinegar, baking soda, and flour.
Add the baking soda. Without stirring, pour the vinegar over it, then mix.
Gradually add flour and knead until you obtain a dough that is slightly firmer than earlobe softness.
While kneading, add 1½ tea glasses of vegetable oil and continue kneading until the dough fully absorbs the oil.
Resting:
Cover the dough with plastic wrap to prevent it from drying out and let it rest for about 1 hour.
Shaping and Frying:
Divide the dough into small pieces and roll them out slightly.
Fry in plenty of hot oil until both sides are golden brown.
Place the fried pişi on paper towels to remove excess oil and serve warm.

Frying in plenty of oil helps the pişi puff up nicely.
Allowing the dough to rest properly improves both texture and rise.
