ALANYA STYLE STUFFED FLATBREAD (GÖZLEME)

Traditional Dish from Alanya Cuisine


🧾 Ingredients

🥖 Dough

  • 1 kg wheat flour
  • 2 teaspoons salt
  • Water (as needed)

🧅 Filling

  • 5 medium onions
  • 500 g curd cheese (çökelek)
  • 1 bunch parsley
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tea glass olive oil

🧈 For Serving

  • Butter

👩‍🍳 Preparation

Dough

Mix flour and salt in a large bowl.
Gradually add water and knead until a slightly firm dough is formed.
Cover with a damp cloth and let it rest for at least 1 hour.


Filling

Finely chop the onions and sauté them in olive oil.
Let them cool, then add curd cheese, chopped parsley, salt, and black pepper.
Mix well to prepare the filling.


🔥 Cooking

  • Divide the dough into egg-sized pieces
  • Roll each piece out thinly
  • Place filling on one half
  • Fold the other half over
  • Press the edges firmly to seal
  • Cook on a griddle (preferably over wood fire) or in a pan

🍽️ Serving Suggestion

Serve hot and brush with melted butter.
Best enjoyed with ayran (yogurt drink) or tea.
