Su Böreği Recipe

Su böreği is one of the most beloved traditional dishes, made with hand-rolled dough sheets that are boiled, layered, and filled with a generous cheese mixture.

Servings: 1 medium tray (8–10 people)


🛒 Ingredients

For the Dough:

13 eggs
1 teaspoon salt
Flour (as much as needed)

For Brushing Between the Layers:

200 g butter
2 cups vegetable oil

For the Filling:

1 kg white cheese (such as feta)
1 bunch parsley


🔥 Instructions

Prepare the Dough:

Mix the eggs and salt. Gradually add flour and knead until you obtain a dough that is slightly firmer than earlobe consistency. Divide the dough into 10 equal pieces.

Roll and Boil the Dough Sheets:

Roll out 8 of the dough pieces to the size of your baking tray. Boil each sheet one at a time in salted boiling water. Immediately transfer the boiled sheets into cold water to cool, then drain well.

The remaining 2 pieces will not be boiled; they will be used dry for the bottom and top layers.

Assemble the Börek:

Place one unboiled (dry) sheet at the bottom of the tray. Layer 4 boiled sheets on top, brushing each layer with a mixture of melted butter and vegetable oil.

Mix the crumbled cheese with finely chopped parsley and spread the filling evenly over the fifth layer.

Place the remaining 4 boiled sheets on top, brushing each with oil. Finally, cover with the last unboiled (dry) sheet.

Cooking:

Cook the prepared börek over medium heat on the stovetop or over charcoal. Once the bottom is golden brown, carefully flip it and cook the other side until golden as well.

Slice and serve warm.

After boiling, make sure the dough sheets are transferred to cold water and thoroughly drained.

Brushing oil evenly between each layer ensures a flaky texture and enhances the flavor.
