Fresh Green Beans with Borlotti Beans Recipe (Turkish-Style Stew)

Ingredients (Serves 6)

  • 500 g fresh green beans

  • 500 g fresh borlotti beans (cranberry beans)

  • 5 medium tomatoes

  • 3 tablespoons tomato paste

  • 1 tablespoon red pepper powder

  • 1 cup vegetable oil

  • 3 cloves of garlic

  • 1 teaspoon salt


Preparation

1. Pre-Preparation

  • Trim and wash the fresh green beans and borlotti beans.

2. Cooking

  • Place finely chopped onions, grated tomatoes, salt, tomato paste, red pepper powder, vegetable oil, and borlotti beans into a pot.

  • Cook over low heat with the lid closed, allowing the ingredients to sauté and release their juices.

  • Since borlotti beans take longer to cook than green beans, this initial step is important.

  • Then add the green beans and continue sautéing for a while.

  • Add enough water so that it does not exceed the level of the beans. Cover and cook until tender.

  • Shortly before the dish is done, you may add chopped garlic if desired.


Tip

  • Cooking Time: As borlotti beans require more time to soften than green beans, they should be added to the pot first and sautéed briefly before adding the green beans.
